Salmon Breakfast Taco

Ingredients
Serves 2:
1/4 Red onion
4 Large free range eggs
5g Butter
50g Smoked salmon (flaked)
75g avocado (smashed)
75g Cherry tomatoes (halved)
Handful of spinach
4 small tortilla
Sriracha mayo

Add the butter to a non-stick frying pan on a medium-high heat. Once melted, add in your eggs and stir continuously to scramble.

When the eggs are almost done add in the red onion, tomatoes, salmon and spinach. When the spinach has wilted completely its done.

Add a 1/4 of the avacado to a tortilla and top with a 1/4 of the egg mix.

Finish with a small amount of Sriracha mayo.
