Ingredients

Serves 2:

1/4 Red onion

4 Large free range eggs

5g Butter

50g Smoked salmon (flaked)

75g avocado (smashed)

75g Cherry tomatoes (halved)

Handful of spinach

4 small tortilla

Sriracha mayo

  • Add the butter to a non-stick frying pan on a medium-high heat. Once melted, add in your eggs and stir continuously to scramble.

  • When the eggs are almost done add in the red onion, tomatoes, salmon and spinach. When the spinach has wilted completely its done.

  • Add a 1/4 of the avacado to a tortilla and top with a 1/4 of the egg mix.

  • Finish with a small amount of Sriracha mayo.
