Chicken Chow Mein
Chow Mein that takes 10 mins to make?! These are delicious, full of veggies and high protein. They also work perfectly hot and cold, making them perfect for packed lunches.

Serves 3:
For the sauce
3 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame oil
1tsp sugar
For the stir fry
300g chicken thighs (cut into strips)
¼ white cabbage
1 carrot (thinly sliced)
1 bell pepper (thinly sliced)
1 small onion (thinly sliced)
3 cloves of Garlic (thinly sliced)
4 big leaves of pak choi (thinly sliced)
Tbsp of sesame oil (for frying)
4 nest of egg noodles
Spring onions - chopped.
Ingredients

Thinly slice all veg and set aside for later. Then cut chicken into thin slices.

In a small bowl, mix together sauce ingredients until fully combined.

Add chicken to a hot pan, season with salt and pepper, and cook for 5 mins stirring constantly. Once cooked, add a splash of soy sauce to coat the chicken, once reduced and chicken is coated, remove from pan and set aside.

Add all veggies to wok and stir fry for 2-3 mins. Add cooked chicken back to pan, along with the sauce, mix until combined.

Cook noodles according to packet instructions.

Add cooked noodles, and stir to combine. Then it's ready to serve!
