Honey Peanut Crunch Slaw

Colorful vegetable salad with edamame, carrots, onions, and various seeds

Perfect for a prepable lunch. Crunchy, sweet, salty and filling. It stays crunchy and fresh, which makes it a great option for taking into the office.

Nutritional Information

Serves 2:

1/2 small white cabbage (shredded)

2 carrots (julienned)

1/2 red onion (thinly sliced)

4 tbsp edamame beans

200g shredded chicken breast

2 tbsp fresh chopped coriander

For the Dressing

1 tbsp runny peanut butter

1 tbsp soy sauce

1 tbsp rice vinegar

1 heaped tsp honey

1 tsp ginger paste

Ingredients

  • Shred the cabbage, carrot and red onion. Place into a bowl, season with a pinch of salt and mix together.

  • Add in the chopped coriander, edamame beans and shredded chicken.

  • Add in all of the dressing ingredients and toss to combine. (if your peanut butter isn't runny quickly pop it in the microwave to loosen.)

    Store left overs for up to 3 days.
