Peanut Noodle Salad

This Thai inspired Noodle Salad with a homemade Peanut Sauce is one of our favourite dishes when the summer approaches. Packed with Thai flavours and fresh ingredients.

Serves 4:

250g Spaghetti

2 chicken breasts

50g Shredded Purple Cabbage

50g Grated Carrots

25g Baby Spinach

1 Red Pepper (strips)

50g Shelled Cooked Edamame Beans

15g Corriander (optional)

Sauce:

4tbsp peanut butter

1 tbsp sriracha mayo

2 Tbsp soy sauce

1.5 tbsp rice vinegar

1 tbsp honey

1 tbsp sesame oil

1 tsp garlic

1 tsp grated ginger

Water to loosen

Ingredients

  • Cook spaghetti

  • Prep veggies and mix sauce ingredients together.

  • Cut chicken into strips and cook in a pan for around 5 minutes or until cooked through.

  • Add splash of soy sauce to chicken. Keep on heat until soy sauce thickens and coats chicken.

  • In a big bowl combine all ingredients. Top with chicken and enjoy!
