Protein Frozen Smoothie Bowl

Sometimes the best way to start a summers day is with frozen smoothie bowl thats densely packed with fruit, protein and loaded with antioxidants, vitamins and minerals.

Serves 2:

1 small banana, frozen

100ml almond milk

100g frozen raspberries

100g frozen blueberries

2 scoops (50g) vanilla protein powder

For Toppings

30g dark chocolate

50g smooth peanut butter

25g frozen blueberries

25g frozen raspberries

Ingredients

  • 1. Place all the smoothie ingredients in a blender and blitz until it has a smooth, ice-cream-like consistency. Don't blitz for more than you have to, as the more you blitz, the more air is incorporated, which lightens the colour of your smoothie mix.

    You may find you need to scrape the sides down a few times or give the blender a little jiggle.

  • Place the chocolate and peanut butter in a heatproof bowl over a pan of simmering water, making sure it doesn't touch the water. Gently melt the chocolate and peanut butter, stirring occasionally. (Alternatively, place the bowl in a microwave and heat for no more than 6 seconds at a time, stirring each time until the chocolate and peanut butter has fully melted, taking care not to burn it.)

  • Pour the frozen smoothie mix into your breakfast bowl and scatter the frozen blueberries and raspberries on top before drizzling over the melted chocolate and peanut butter.

Method

Tip: When freezing bananas, slice them and freeze them for a few hours on a flat tray then transfer to an airtight container or freezer bag. This stops the slices from sticking together, making them easier to blitz
