Halloumi Shakshuka Wrap

A tortilla topped with guacamole, tomato salsa, spinach leaves, grilled halloumi slices, and a sunny-side-up egg on a plate.

Easy and filling, this is equally as good for both lunch or breakfast, so I guess its a brunch! A veggie option thats loaded with protein to keep you full until your next meal.

Serves 1:

2 tbsp tomato purée

1 wholemeal tortilla wrap

50g avocado

1 egg

60g halloumi, sliced

20g baby spinach leaves sea salt and freshly ground

Black pepper

Spray light oil for frying

Ingredients

  • Spread the tomato purée on the tortilla wrap leaving a 2-cm border around the edge.

  • Mash the avocado onto the tomato purée and season with salt and pepper.

  • In a small frying pan, fry the egg in a thin coating of spray light oil over a medium-high heat until cooked to your liking.

  • Place the fried egg on top of the avocado mash then fry the halloumi for 2 minutes on each side in the same pan, until golden on each side.

  • Place the halloumi slices on top of the fried egg, add the spinach and fold the wrap. Cut in half and serve.
