Halloumi Shakshuka Wrap
Easy and filling, this is equally as good for both lunch or breakfast, so I guess its a brunch! A veggie option thats loaded with protein to keep you full until your next meal.

Serves 1:
2 tbsp tomato purée
1 wholemeal tortilla wrap
50g avocado
1 egg
60g halloumi, sliced
20g baby spinach leaves sea salt and freshly ground
Black pepper
Spray light oil for frying
Ingredients

Spread the tomato purée on the tortilla wrap leaving a 2-cm border around the edge.

Mash the avocado onto the tomato purée and season with salt and pepper.

In a small frying pan, fry the egg in a thin coating of spray light oil over a medium-high heat until cooked to your liking.

Place the fried egg on top of the avocado mash then fry the halloumi for 2 minutes on each side in the same pan, until golden on each side.

Place the halloumi slices on top of the fried egg, add the spinach and fold the wrap. Cut in half and serve.
