Prepable Protein Bagels

A super food frittata sandwiched with melty smoked cheese in a protein bagel. Batch cook and freeze for a prepped lunch or breakfast that isn’t overnight oats.

Ingredients

Serves 4:

4x Protein bagels

1/2 cartoon 500g egg whites

2 eggs

1 handful chopped parsely

1 handful of chooped basil

1 spring onion (finely diced)

4 diced sundried tomatoes (drained from oil)

4 slices smoked applewood cheese (or cheddar)

Method

  • Whisk eggs and egg whites with chopped parsley, basil, diced spring onion, sundried tomatoes and season with salt and pepper.

  • Tip into a suitable oiled or non stick baking dish so it will cut into 4 bagel sized squares around 2cm thick.

  • Bake the frittata at 200c fan for 5-10 minutes until set. Allow to cool.

  • Cut the frittata into 4 squares and place on bagels. Top with a slice of cheese. Wrap the bagels in tin foil and freeze for up to 3 months.

  • To serve, remove from the freezer to thaw overnight. In the morning stick it in an airfryer or a preheated oven at 200c for 5-6 minutes. Once the cheese has melted add in some extra spinach and sliced tomatoes.
